아시아의 아픈 손가락 필리핀이 움직이고 있다. 경제 성장률과 소비 지출이 각각 6%, 5%씩 증가했고, 51%의 도시화와 함께 저렴한 물가로 매력적인 소비시장을 만들어 낸 것이다.


1인당 GDP는 여전히 3000달러로 낮지만 개인 저축은 소득의 13% 수준으로 높아졌다. 게다가 중국의 대규모  ‘디아스포라(Diaspora, 고국을 떠나는 사람·집단의 이동)’들이 상업용 부동산을 개발하면서 경제 성장이 베트남과 인도 시장 수준을 넘어, 인도네시아와 태국과 같은 국가들의 레벨까지 도달했다. 그렇게 소득의 증가, 빠른 도시화, 활발한 상업용 부동산 개발, 이 3가지 핵심적 변화는 경제 동향에 따라 자연스럽게 식품 서비스 산업의 성장(7%)을 가져왔다.




그동안 필리핀에는 선도적인 글로벌 체인이 대거 입점, 수년째 운영해오고 있지만 현지 파트너들을 위주로 한 개발 방식으로 트렌드를 선도하는 캐주얼, 혹은 파인 다인 레스토랑 그룹은 부재한 상황이었다. 그러나 최근 마닐라에서 머무르며 경험했던 필리핀 외식 시장은 시대가 흐름에 따라 변화를 맞이하고 있었다. 특히 중산층의 외식 소비자들이 기존 미국 캐주얼 브랜드에 비해 더 나은 대안을 찾고 있다는 흐름은 필리핀 외식시장의 긍정적인 가능성을 확인할 수 있게 해줬다.


필리핀 외식시장의 일반적인 흐름을 살펴보면, 여전히 맥도날드, KFC, Friday’s, 쉐이크 쉑, 스타벅스 등 많은 미국 체인 브랜드들에 소비자들의 발걸음이 잦고, 가장 최근에는 올리브 가든(Olive Garden)과 같은 레스토랑 체인도 입점을 시도해 이들에 대한 선호도는 당분간 지속될 것으로 전망된다. 그러나 앞서 말한 필리핀 외식시장의 다변화의 흐름도 분명히 존재했다. 현지 기업가, 투자자들 사이에서 마닐라를 다른 동남아시아 거대 도시들과 동등한 위치로 만들기 위해 풀 서비스 레스토랑의 도입이 시도되고 있기 때문이다. 


최근 급부상하고 있는 필리핀 브랜드 사례를 통해 변화를 살펴보자.




‘Moment Group’은 ‘8 Cuts Burger’, ‘Manam’, ‘OOMA’와 같은 브랜드를 소유하고 있는 체인으로, 마닐라 외식시장에서 라이징 스타로 떠오르고 있다. 한국 독자들도 알만한 이 그룹의 라이센스 브랜드는 ‘Din Tai Fung’, 대만의 유명 브랜드와의 계약을 통해 필리핀에서는 Moment에서 매장을 운영하고 있다. 세 명의 젊은 창업자의 손에서 탄생한 그룹은 그동안 감각적인 캐주얼 다이닝을 향유하기를 바랐던 마닐라 외식 소비자들에게 열광적인 반응을 이끌고 있다. 8 Cuts Burger는 필리핀에서 맛볼 수 있는 최고급의 수제버거로 무려 버거킹 버거 가격의 3배가량 차이가 나지만 최고의 패티를 구현하기 위해 소의 8가지 부위를 사용, 갓 분쇄한 고기 부위들을 손으로 반죽해 그 자리에서 굽기 때문에 여타의 버거 브랜드에서는 찾을 수 없는 퀄리티를 자랑한다. 


Manam은 그룹의 효자 브랜드로 런치, 디너 할 것 없이 언제고 긴 대기시간을 거쳐야 식사가 가능할 정도로 필리핀 외식 소비자들에 가장 열렬한 지지를 받고 있다. Manam은 한국 여행객들에게도 ‘줄 서서 먹는 맛집’, ‘한국인의 입맛에도 잘 맞는 현지 프랜차이즈’ 정도로 잘 알려져 있는 곳인데 이들의 브랜드 콘셉트는 ‘Filipino comfort food in classics and twists’로, 제공되는 메뉴가 필리핀 전역에서 즐겨 찾는 메뉴지만 Manam 만의 색깔을 입혔다.


   

필리핀 사람들은 일본 음식도 선호하기 때문에 OOMA에서 제공하는 초밥과 맥주, 사케 조합은 늘 사랑받고 있으며, 대만의 슈퍼스타 브랜드 Din Tai Fung까지 모든 매장에서 눈에 띄는 성과를 보이고 있다.

‘The Bistro Group’은 필리핀 캐주얼 다이닝 시장에서 다년간 리더로 자리매김하고 있는 브랜드로 미국의 오랜 다이닝 브랜드를 필리핀에 론칭하며 성장해왔다. 이들은 25년 전, TGI Friday’s를 시작으로 ‘Italianni’, ‘Watami’, ‘Buffalo Wild Wings’, ‘Texas Roadhouse’, ‘Denny’s’, ‘Red Lobster’ 및 ‘Hard Rock Café’ 등을 운영하며 여전히 강력한 마켓파워를 자랑한다. 최근 이들은 올리브 가든의 도입을 위해 모기업 Darden Restaurants와의 협상을 체결하기도 했다.

한편 고위 경영진은 필리핀 현지 다이닝에 대한 소비자들의 분별력이 높아지면서 그들의 요리 퀄리티를 높이기 위해 필리핀에서 떠오르는 셰프로 촉망받는 필리핀-영국계 조시 바웃우드(Josh Boutwood) 셰프를 영입, 그룹 전체 컬리너리 디렉터의 자격을 부여해 그의 유럽 경력을 통해 지금까지 마닐라에서 볼 수 없었던 로컬, 그 이상의 새로운 시장을 열었다.

‘HELM’은 최대 10인까지 이용할 수 있는 셰프의 테이블(Chef’s Table) 레스토랑이다. 메뉴는 새로운 테마에 따라 3~4개월마다 변경되며 이번 마닐라 출장 시 방문했을 때에도 훌륭한 메뉴를 맛볼 수 있었다. ‘SAVAGE’는 마닐라 타기그(Taguig) 지역의 HELM McKinley Parkway 지점 내부에 자리 잡은 장작 숯불구이 레스토랑으로 고기가 메인 메뉴다. 구이는 불, 연기와 재만을 사용한 선사 시대의 원초적 요리법으로 완성되며 인테리어 디자인 역시 불과 음식에 집중한 모양새로 자리 잡았다. 최근 새롭게 론칭한 The Test Kitchen은 비스트로 테스트 키친이 실제 레스토랑으로 발전된 사례로 필리핀 외식 소비자에게 신선한 재료에 색깔이 강한 맛과 향을 더해 매일 다른 멀티 코스 메뉴를 제공한다.

‘Bistronomia’는 마닐라에서 외식 시장의 물결을 새롭게 이끌어가고 있는 또 하나의 그룹이다. 스페인 출신의 세 명의 동업자가 설립한 현지 식당에서는 역사가 오래된 최고의 스페인 요리를 경험할 수 있다. 특히 ‘Los Flores’, ‘Rambla & Tomatito’와 같은 콘셉트 브랜드는 마닐라에서 큰 인기를 얻고 있고, 이 브랜드를 통한 성장세는 당분간 지속될 것으로 보인다. 또한 필리핀 내외에서 츄로스 디저트 카페도 론칭할 예정이라고 밝혀 앞으로의 행보가 기대되는 그룹이다.

마지막으로 언급하지 않을 수 없는 ‘WILDFLOUR CAFÉ + BAKERY Group’은 설명이 필요 없는 브랜드다. 이미 나에게도 수년 동안 마닐라에 방문할 때마다 들러야 하는 곳으로 자리 잡혔고, 매년 안정적으로 브랜드를 확장해 나가고 있는 것을 볼 수 있어 기쁠 따름이다. 개인적인 생각으로는 가히 마닐라에서 최고의 베이커리 카페라고 해도 무방하다. 창업자는 두 필리핀 자매와 그들의 요리사 남편들이며 모두 요리에 대한 오랜 경험을 가지고 있는 이들이다. 

필리핀, 그중에서도 마닐라 외식 시장은 말 그대로 이제 불붙기 시작한 곳이다. 마닐라 이외의 다른 주요 도시에서도 미미하지만 시장 다변화의 불씨를 지폈다. 세부와 다바오와 같은 곳에서 가능성이 확인되고 있는데 아직 마닐라의 수준까지 오르는 데는 몇 년은 더 소요될 것으로 보인다. 만약 필리핀 외식 시장에 접근해보고자 한다면 이 칼럼에 언급된 도시들을 위주로 시도해보길 바란다. 한국인들의 입맛에도 큰 실패를 보지 않을 곳들이기 때문이다.

Big Growth Story



The Philippines, long the sick child of Asia, is on the move. Strong economic growth (6%), coupled with rising consumption expenditure (5.5%) and rising urbanization (51%), make this an attractive consumer market for lower end affordable items. GDP per capita is still low at about $3000 but personal savings have increased recently to 13% of income. In addition, given the large Chinese diaspora here, commercial real estate development is on a level with countries like Indonesia and Thailand and well above markets like Vietnam and India.

In line with economic trends, the consumer foodservice industry is growing rapidly as well (7%) given the combination of rising incomes, faster urbanization and robust commercial real estate development.



Leading global retailers have been operating in the Philippines for many years through local partners but polished casual and finer dining restaurant groups for the most part have been absent. My impressions from a recent stay in Manila suggest that the tastes are changing and middle-class diners are now looking for better alternatives compared to legacy American casual brands. 
By any standard, the Filipino population still has a large taste for American restaurant chains (McDonald’s, KFC, Friday’s, Shake Shack, Starbucks, etc.) and more are entering the market all the time, most recently Olive Garden. However, local entrepreneurs are venturing out into the full-service restaurant space in Manila with new innovative concepts that equal anything in other Southeast Asian mega-cities.
Here are some examples to consider.

The Moment Group is a fast-rising star on the Manila dining scene with such popular brands as 8 cuts Burger, manam, ooma and a licensed brand, Din Tai Fung. Three young founders lead the group and are bringing polished casual dining to adoring customers. 8 cuts Burger is a local take on the better burger segment and it does not disappoint. Eight cuts of beef are blended into patties that are freshly ground, hand pressed and seared to order. Manam is a powerhouse brand with local Filipino diners; always big lines for lunch or dinner. The brand concept is defined as “Filipino comfort food in classics and twists.” All the local favorites can be found on the menu but done the manam way. Filipinos love Japanese food and ooma does not disappoint, with “new wave sushi paired with beers and sakes.” Finally, the group negotiated the license from the Taiwan superstar brand, Din Tai Fung, and sales at all outlets appear robust. 

The Bistro Group has been a perennial leader in the casual dining market by bringing legacy American casual dining brands to the Philippines.  It started 25 years ago with TGI Friday’s and the brand is still going strong today. The group also operates Italianni’s, Watami, Buffalo Wild Wings, Texas Roadhouse, Denny’s, Red Lobster, and Hard Rock Café. Most recently, the group announced that they had signed a deal with Darden Restaurants for Olive Garden. However, senior management certainly noticed that the local market was becoming more discerning and have upped the culinary game with the hiring of Chef Josh Boutwood, as the Group Culinary Director. Trained in Europe, Josh has opened new venues which are exciting local palates beyond anything experienced in Manila to date. HELM is a 10-seater restaurant that serves a chef’s table dining experience like no other.  The tasting menu changes every 3-4 months based on a new theme. I tried it this month when I was in Manila and was not disappointed. SAVAGE, on the floor above HELM at McKinley Parkway in Taguig, is an open wood fire restaurant where meat is the hero. The restaurant takes one back to pre-historic cooking methods using fire, smoke and ash to grill each meat dish. The store uses industrial design to ensure the focus is on the fire and the food. THE TEST KITCHEN, another new addition, was actually the Bistro test kitchen that became a restaurant. Diners indulge in a non-repetitive multi-course menu using fresh ingredients and bold flavors.

Bistronomia is another group making culinary waves in Manila. Founded by three friends from Spain, local diners are now able to experience the best of Spanish cooking in a country with a long Spanish heritage. Concepts such as Los Flores, Rambla & Tomatito have been a big hit here and the group shows no sign of slowing down. They have also launched a churros dessert concept which they plan to franchise within the Philippines and abroad.

Finally, I would be remiss without mentioning the WILDFLOUR CAFÉ + BAKERY Group. I have been enjoying the food there for many years and it is exciting to see the founders expanding the brand now in Manila. In my opinion, it is the best bakery café in Manila by far. The founders are two Filipina sisters and a chef husband, all with long term culinary experience.

While Manila has a gastronomy scene literally on fire, the same cannot be said for other main cities in the Philippines. The culinary scene is clearly improving in places like Cebu and Davao but it will be many years before the standards rise to Manila levels.
