[Joel의 Global Dining Market] 전례없는 도전 과제에 직면한 미국 레스토랑들

미국 경제가 다달이 성장세를 보이고 있다. 실업률이 4.3%로 감소했고, 수 년간의 불경기에서 벗어나 경기도 상승세다. 소비자신뢰지수(경기에 대한 소비자 견해를 보여주는 지수) 또한 긍정적이다. 하지만 긍정적인 전망에도 불구하고, 외식산업에서 들려오는 소식들은 암울하다. 지난 몇 달 동안 대중의 높은 관심을 받았던 몇몇 유명 기업의 CEO들이 밀려나가거나, 단기간에 큰 성장을 바라 극심한 매출 압박에서 벗어나지 못하고 일찍이 은퇴했다. 대부분의 대기업 가맹점들은 낮은 판매율을 기록하고 있고, 이러한 상황은 특히 캐주얼 다이닝 영역에서 두드러진다. 그런데 빠르게 성장하고 있는 패스트 캐주얼 다이닝의 전망도 그다지 좋아 보이지 않는다. 외식산업이 위협받고 있는 원인은 무엇이고, 어떻게 하면 다시 바로잡을 수 있는 것일까?


Friday’s, Ruby Tuesday, Buffalo Wild Wings, Applebee’s와 같은 대형 체인은 잦은 폐점과 함께 부진한 매출실적을 보이고 있다. Nation’s Restaurant News에서 진행한 인터뷰에 따르면, 극성의 투자자들로부터 압박에 시달리고 있는 Sally Smith(Buffalo Wild Wings 사장)는 외식산업의 붕괴의 원인을 밀레니얼 세대에 있다고 보고 있다. 밀레니얼 세대들은 밖에 나가기보다 집에서 직접 요리를 해먹거나 배달해 시켜먹는 것을 선호한다. 그들은 이전 세대들보다 간편하게 빨리 먹기를 좋아해 캐주얼 다이닝을 즐겨 찾지 않는다. 그들은 풀 서비스 레스토랑보다 양질의 퀵 서비스 레스토랑 QSR(Quick Service Restaurant)이나 패스트푸드점을 더 선호한다. 이전보다 다양한 조리식품이 제공되고 있는 점도 굳이 식사를 하기위해 밖으로 나가지 않는 이유 중 하나 일 것이다. 반면 HMR식품의 호황으로 식료품점의 매출은 눈에 띄게 좋아졌다. Blue Apron과 같은 회사들은 이제 특정요리에 맞게 정확히 계량된 식재료 키트를 조리법이 적힌 안내책자와 함께 배달하는 사업을 시작했다.
최근 미국 외식산업에서 각광받고 있던 패스트 캐주얼 체인 역시 고전을 면치 못하고 있다. 지난 2016년 4분기엔 대다수의 가맹점의 폐점과 더불어 1.1%의 매출이 하락했다. 많은 업계 전문가들은 이러한 외식업계의 쇠퇴를 수요와 공급의 불균형에 있다고 보고 있다. 낮은 금리와 수월한 자금조달로 인한 공격적인 매장 오픈으로 수요량에 비해 공급량이 많아져 불균형을 이룬 것이 원인이다. 물론 조리식품의 유통채널이 많아진 점도 한 몫 했다.


이 외에 다른 원인들 또한 분명 존재한다. 몇몇 곳의 성행으로 수익을 내는 듯 보였던 조리식품 테이크아웃 전문점 My Fit Foods의 경우 지난 2월, 무려 50곳의 매장이 폐점했다. 브랜드 콘셉트가 고객에게 크게 전달되지 못한 것으로 보인다. 내가 생각하기에 캐쥬얼 다이닝의 위기는 지극히 그들이 자초한 일이다. 요즘 외식 브랜드들의 대부분은 너무 낡고 진부하다. 그들은 모두 비슷한 메뉴만 제공한다. 매장 분위기도 특별히 매혹적이지 않다. 대부분의 가맹점들은 그들이 투자한 금액보다 좋은 결과를 얻지 못할 것을 우려해 시설 개선과 메뉴개발에 자본을 투자하길 꺼려한다. 그중에도 Texas Roadhouse나 BJ’s Brewhouse와 같이 꽤 운영을 잘하고 있는 캐주얼 다이닝 체인점들이 있다. Texas Roadhouse는 Outback Steakhouse와 비교했을 때, 즐거운 매장 분위기를 자아냄과 동시에 중저가에 양질의 디너를 제공하면서 브랜드 가치를 높이고 있는 스테이크 체인점이다. Texas Roadhouse의 사장은 월스트리트(Wall Street) 마인드가 아닌 넓게 내다보는 안목으로 미래 비전을 제시하며 매장을 운영하고 있다. BJ’s Brewhouse 또한 Friday’s과 비슷한 콘셉트이지만 더 나은 음식과 분위기, 거기다 많은 수제 맥주들까지 갖춰 인기 있는 캐주얼 다이닝 체인이다. 밀레니얼들은 이러한 음식점에 열광한다.


고부가가치 산업이라 각광받던 시기를 지나 위기를 겪고 있는 외식업계임에도 불구하고, 고객의 입을 즐겁게 해줄 음식들과 매력적인 분위기의 매장들은 앞으로도 잘 해나갈 것이다. Chick Fil A, In n’Out Burger, and Houston’s와 같은 매장들이 떠오른다. 그들은 늘 한결같고, 나는 그들에게 실망하는 일이 없다. 그들은 경쟁사보다 종업원에게 높은 임금을 지불할 뿐만 아니라 매장 내 훌륭한 맨 파워를 구축하고 있다. 매장은 모두 직영으로 운영돼 본사의 철저한 통제를 받고 있다.

성공의 공식은 지극히 간단하다. 어렵지 않으나 단기적인 이익만 생각하면 따르기 힘들 뿐이다.


■ 높은 임금을 지불하고 훌륭한 맨 파워를 구축할 것.
■ 음식, 서비스, 시설의 질에 초점을 둘 것.
■ 다음 분기만 생각하는 짧은 시야가 아닌 보다 넓은 시야를 가지고 운영할 것.
■ 일선 노동자들과 이익을 나눌 것.
■ 고객에게 늘 좋은 가치를 제공한다는 신념을 잃지 않을 것.


이 단순한 공식을 많은 레스토랑 체인점들이 따르길 바란다!



RESTAURANTS FACE MORE CHALLENGES IN THE USA THAN EVER
The USA economy continues to show improvement month my month. Unemployment is down to 4.3% and incomes are rising after many years of stagnation. The consumer confidence index suggests that people are still feeling optimistic about their lives. Despite these upbeat projections, the news about the restaurant industry is fairly gloomy. In the past several months, at least three high profile CEO’s of public companies have been forced out or announced early retirement due to intense pressure from Wall Street. Most large chains are experiencing negative same store sales growth, especially in the casual dining category. However, the news is not that promising in the fast growing fast casual dining category as well. What is causing these disruptions in the industry and how can it be fixed?


Large chains like Friday’s, Ruby Tuesday, Buffalo Wild Wings and Applebee’s are all suffering from both negative same store sales as well as store closures. In a recent interview with Nation’s Restaurant News, Sally Smith, President of Buffalo Wild Wings, and the subject of intense pressure recently from activist investors, suggested that the Millennial generation is a major reason for this disruption. Millennials are cooking more at home and ordering delivery. They eat more quickly than the previous generation and visit casual dining concepts less. They are more inclined to visit better quality QSR or fast casual concepts than full service restaurants. There are also many more prepared food options than ever before. Grocery stores have significantly improved their home meal replacement offerings. Companies like Blue Apron are now delivering full pre-portioned meal kits with instructions on how to prepare the meals. Fast casual chains, the new darlings of the USA foodservice industry, are also struggling recently. In Quarter 4 2106, the fast-casual industry suffered same store sales declines of 1.1% as well as experiencing many store closures. Many industry experts attribute these declines to an imbalance of supply with demand. Low interest rates and easy money fueled over aggressive store development which created an excess of supply versus demand. Of course, more channels available to buy prepared food impact the segment as well.


There are clearly other issues at play as well. My Fit Foods, a take-away only prepared foods retailer with several successful capital raises, closed all of their 50 locations last February. In this case, the concept was not resonating with consumers.
To a large extent, I think the challenges with casual dining are self-inflicted. These brands for the most part are old and stale. Their menu offerings are all similar to each other. The store environments are not particularly inviting. Most of the franchisees do not want to invest in facilities or menu upgrades because they fear not getting good returns on their capital. There are some casual dining chains that are doing better such as Texas Roadhouse and BJ’s Brewhouse. Texas Roadhouse is a steak chain with a very strong value for money proposition that caters to lower to middle income diners as well as providing a fun atmosphere compared for example to Outback Steakhouse. The founder is still running the company and they manage for the long term not for Wall Street. BJ’s Brewhouse is a modern reincarnation of Friday’s with better food and atmosphere and lots of craft beer. Millennials like it.


Despite the weak industry, concepts with a strong value proposition, attractive food and inviting atmosphere continue to do well. Chick fil A, In n’ Out Burger, and Houston’s are a few that come to mind. They are always consistent and I am never disappointed. They also pay higher wages than most competitors and are able to attract the best team members. The stores are also all direct owned and controlled tightly by the headquarters. The formula for success is actually not that difficult to understand but it is harder to follow if you are a public company.

■ Focus on quality = food, service, facilities
■ Manage for the long term not just the next financial quarter
■ Share profits with the front-line employees
■ Never lose sight of giving good value to the customer


I wish more restaurant chains followed this formula!
