우리 그룹은 아시아 태평양 지역에서 많은 대형 프랜차이즈 레스토랑을 대표하고 있다. 대부분 미국, 영국, 일본 그리고 한국에서 영향을 받은 것들이며 우리는 마스터 프랜차이즈 개발 모델의 대부분을 차지하고 있는 마켓 진입 전략에 대해 방향을 제시한다.


그런데 지난 몇 년간의 로컬 아시안 가맹점을 살펴보다 국제적 브랜드들에 영향을 끼치고 있는 중대한 변화들을 목격할 수 있었다.


로컬 브랜드들은 식품 품질 면에서나 매장 디자인 면에서 대형 국제 브랜드를 따라 잡았으며 일부의 경우 이미 훨씬 능가한 브랜드 파워를 보이고 있다.
대규모 국제 체인은 많은 운영 체제를 개발하고 있지만 반대로 로컬체인은 형식에 얽매이지 않고 보다 저렴한 기술 솔루션을 적용할 수 있다. 또한 건축가와 디자이너뿐만 아니라 지역의 특색에 맞춘 전문 요리사들의 인프라도 충분하다.


많은 국제 브랜드는 이미 지루하고 오래된 것으로 인식되고 있다.
맥도날드, KFC, TGI Friday's와 같은 브랜드들은 아시아 시장에서 40년에 걸쳐 활동해왔다. 이제 그들은 더 이상 새로운 것이 아니며, 뒤늦게 나온 2군 브랜드들도 경제적 위기에 직면한 매장 상황뿐만 아니라 운영 콘셉트에도 그다지 관심을 가지고 있지 않다. 그렇기 때문에 수익을 낼만한 매출 성과가 보이지 않는다.


국제적 브랜드들은 다소 융통성이 없고 욕심이 많다.
대규모 프랜차이즈들은 종종 그들의 가맹점을 늘리는 것에만 관심을 두고 있어 가맹점이 탄탄한 재정적 기반을 바탕으로 성장할 수 있도록 도와주는 컨설턴트로서의 역할을 제대로 못하고 있다. 심지어 계약 조건이나 수수료 및 로열티를 조정하는 것조차 꺼려한다. 이로 인해 로컬 프랜차이즈 1~2곳을 세워놓고 수익성을 연구한 다음 개발을 중단하기로 결정하는 경우가 발생하기도 한다. 프랜차이즈 및 가맹점 모두 망하는 길이다.


그럼에도 불구하고 아시아의 가맹점들은 여전히 세계적으로 유명한 오래된 프랜차이즈를 원한다.
일을 하다보면 나에게 오는 질문들은 대개 Cheesecake Factory, PF Chang's, Shake Shack과 같이 미국의 두 해안을 기반으로 하는 미디어에 노출된 것들이다. 한편 달라스나 시카고 등 중부지역의 브랜드들에 대해서는 거의 물어오지 않는다. 아시아의 경우에는 서아시아권의 브랜드가 우수하다. 런던은 일본, 홍콩, 싱가포르, 그리고 인도에 기반을 둔 가맹점들에게 관심의 대상이다.


대부분의 큰 로컬 가맹점은 LA, NYC 그리고 런던과 같은 큰 도시에 방문해 그들의 본국으로 들여올 새로운 아이디어를 모색하고자 한다. 때문에 이 그룹의 브랜드들은 훌륭한 디자인과 음식 표현으로 신선함을 선사하고 있다. 지속적인 혁신은 세계적인 인지도와 관심을 한 몸에 받을 수 있게 하는 원천이다.


높은 인스타그램 팔로워는 앞으로의 중요한 열쇠가 될 것이다.
인터넷이 그 어느 때 보다도 활발해지면서 모든 중요한 정보들은 로컬 프랜차이즈를 원하는 예비 가맹점주들에게 쉽게 제공된다. 그들은 각종 매체를 통해 최근 매장 판매 트렌드 파악이 가능하다. 만일 지역 상권이 전반적으로 잘 되고 있는 트렌드가 아니라면, 론칭하고자 하는 브랜드가 아무리 좋다고 하더라도 소비자에게 각인될 것은 기대하지 말아야 한다.


작은 니치 브랜드더라도 입소문을 통해 높은 인스타그램 팔로워를 보유하고 있는 곳이 더 많은 관심을 받고 있다. 일부 미국의 20여 개의 작은 체인들은 2000여 개의 대형 체인보다 더 많은 팔로워를 보유하고 있다. 요즘 우리는 큰 글로벌 체인보다 작은 니치 브랜드들에 대한 의뢰가 더 많이 들어오고 있다.


세계는 변화하고 있고 이에 따라 산업 구조도 함께 변화해야 한다.
다음은 앞으로의 프랜차이즈 시대를 맞이해 고려해야할 몇 가지 팁들이다.

- 소셜 미디어에서 활발한 브랜드인지 고려할 것.
- 수수료 및 제품 소싱 요구와 관련해 유연한 대응을 할 것.
- 브랜드를 각인시키기 위해 국내시장에서 하나 이상의 플래그십 스토어를 론칭할 것.
- 변화하지 않으면 도태될 수 있다는 것을 인식할 것. 혁신, 혁신, 그리고 혁신!



What Asia Pacific Franchisees Are Looking for Now!

Our group represents many large-scale restaurant chains in the Asia Pacific region. These concepts comemostly from the USA , UK, Japan and Korea and we assist them with market entry strategies which rely for the most part on a master franchise development model. In the past few years we have witnessed a significant shift in focus by these local Asian franchisee operators which has broad implications for these larger international brands.


Local brands have caught up and, in many cases, have surpassed international brands in terms of food quality and store designs.

While large international chains have clearly more developed operating systems, local chains can now buy technology solutions more cheaply than ever before. Also, there are sufficient numbers of architects and designers as well as chef consultants to tailor food more specifically for the local palate.


Many international brands are perceived as boring and stale.

Brands such as McDonald’s, KFC and TGI Friday’s have been active in many Asian markets for as long as 40years in some cases. They are no longer a novelty, and the second-tier players that come later often find very limited interest in their concepts in addition to facing store level economics challenges. They simply cannot generate sufficient revenues to make the financial returns work.


International brand owners are often inflexible and greedy.

Their interest is to sell franchises and not to act as consultants to the local franchisee to help them develop a solid financial foundation from which to grow. They are often reluctant to adjust fees and royalties as well as ingredients. It often happens that a local franchisee builds 1-2 stores, studies the returns and then decides to stop development. Both sides lose in this case.


Asian Franchisees still want some older brands with strong international awareness.

I am often asked about brands such as Cheesecake Factory, PF Chang’s and Shake Shack given their exposure in international media which are mainly based on both coasts of the USA . I am seldom asked about brands from the middle part of the country such as Dallas or Chicago. For Asia, brands on the West Coast play best. London is also a place of interest for franchisees based in Japan, Hong Kong, Singapore and India. Most of the larger local franchisee groups plan visits to big cities such as LA, NYC and London looking for new ideas to bring back to their home markets. However, it is important that these brands look fresh with great design and food presentation. Continuous innovation leads to strong global awareness and interest.


High Instagram following is the key going forward.
With the ubiquity of the internet, all important information is easily available to local franchisee candidates. They know your same store sales trends and latest earnings (if a public entity). If your home market business is trending poorly, do not expect that your brand will be well received by this audience.


There is far more interest than ever in smaller niche brands with very high Instagram following. I have seen 20 store concepts in the USA have larger followings than 2000-unit chains. These data are carefully studied and noted. Today we get more requests for these small niche brands than the larger global chains for the most part. For example, I was recently asked about a 8-unit London based brand that went viral on YouTube. I had never heard about this concept before it was well known by many in my industry network from India.


The world is changing and international chains need to change with it. Here are a few tips to consider.

- Make sure you are active and relevant on social media
- Be flexible with your fees and product sourcing requirements
- Build one or more flagships in your home market to showcase your brand
- Innovate, Innovate, Innovate.
