[임준환의 Hotel Design Story] 르 라팡(Le Lapin)

불어로 토끼라는 뜻을 가진 르 라팡(Le Lapin)은 마카오 사이언스 센터(Macao Science Centre)에 위치한 프랑스식 레스토랑이다. 윌슨 어소시에이츠(Wilson Associates) 뉴욕 디자인팀이 공간 구획 및 설정, 브랜드 아이덴티티 설정, 메뉴 설정, 키친 플래닝, 조명, 테이블, 그래픽, 유니폼 등 레스토랑 안에 필요한 모든 요소들을 디자인했다. 특히 윌슨 그래픽팀에서는 캐릭터 설정, 글자 및 사인Signage 디자인을 비롯한 메뉴 디자인을 통해 르 라팡의 아이덴티티를 확실히 만들어 냈다. 이처럼 테이블 위에 올라가는 모든 것, 식당에서 보고 느끼는 모든 것들을 통해 고객이 느끼는 오감을 만족시키는 서비스를 제공하기 위해 클라이언트를 위한, 클라이언트에 의한 디자인을 선보인다.


디자인 콘셉트
현대식 프랑스 요리의 대가 조엘 로부숑(Joel Robuchon)의 제자이기도 한 Carson Liu는 모더니즘 건축의 마지막 건축가 이오밍 페이(I.M. Pei.)가 디자인한 마카오 사이언스 센터(Macao Science Centre)에 자신만의 독특한 현대식 프랑스 레스토랑인 르 라팡(Le Lapin)을 오픈했다. 리서치 과정을 거쳐 클라이언트와 수많은 대화를 한 결과 윌슨 디자인팀은 클라이언트만의 독창적인 공간을 위해 Carson이 태어난 해의 상징인 토끼를 디자인 요소로 사용하기로 했다.

동아시아의 전설에서 달에 산다는 옥토끼의 이야기와, 공상 과학과 모험 소설로 유명한 프랑스 소설가 쥘 베른(Jules Verne)의 기발한 상상력이 담긴 작품인 ‘지구에서 달까지(From the Earth to the Moon)(1865)’에서 보여지는 달에 대한 환상, 인간도 달에 갈수 있다는 이야기 속에서 디자인적인 요소를 찾았다. 이상한 나라의 앨리스에 등장하는 엉뚱한 토끼의 이미지와 그가 이동하는 통로에서 아이디어를 얻어 재미난 비밀 공간 또한 만들어 냈다.


캐릭터 설정
레스토랑을 대표하는 몇 가지 캐릭터들을 설정하고, 1960~70년대의 프랑스 파리에서 유행했던 액서세리와 패션 스타일을 적용해 그들의 삶의 스토리를 삽화로 그려 넣었다. 보는 이로 하여금 마치 실제 존재 했던 인물들의 역사적인 공간에 방문한 듯한 느낌이 들게 했다.

레스토랑의 캐릭터들을 소개하자면, 이곳의 마스코트이자 이야기의 주인공인 ‘미스터 토끼’ 군은 세련된 프랑스인으로 심술궂은 와인 마니아다. 그에 반해 우아하며 과묵한 성격인 ‘미스 토끼’ 양과 미스터 토끼 군의 인생 최고의 라이벌 ‘미스터 폭스’를 캐릭터로 만들어 그들의 삶과 일상적인 상황들을 재미있게 표현했다. 이러한 요소들은 입구의 문에서부터 메인 다이닝 공간, 프라이빗 다이닝 공간에서 화장실에 이르기까지 레스토랑 전체에 스며들었다. 그저 맛 좋은 현대식 프랑스 레스토랑이라는 이미지의 전달만이 아닌, 공간의 상징성과 재미, 자신들만의 이야기를 레스토랑 안에서 탄탄히 전개해 나간 것이다.



공간설정(Layout)
마치 밝게 빛나는 둥근 달과 같이, 르라팡은 완전한 원형의 평면에 위치해 있다. 이는 달이라는 키워드를 만들어낸 핵심적인 이유이기도 하다. 레스토랑의 입구에서는 ‘날으는 촛불(flying candles)’이라는 천정 조명들이 고객들을 맞이한다. 레스토랑 안으로 들어가면 Cason이 그동안 수집한 20억 원 가량의 와인 컬렉션들을 진열해 놓은 16m 높이의 ‘와인 월(wine wall)’을 볼 수 있다. 전체적으로 검은색 배경에 수많은 LED 포인트 조명들을 사용, 마치 밤하늘에 별들이 반짝이는 효과를 냈다.



와인 월을 따라 걷다보면 초승달 모양으로 디자인된 바 라운지의 카운터가 공중에 떠있는 듯 빛나고 있으며, 반짝이는 크리스탈 위스키 병들 사이로 아름다운 마카오의 야경이 펼쳐진다. 메인 다이닝(main dining) 공간에는 사슬처럼 엮어 만든 금빛 매시 패널들을 천정에 매달아 공간의 구획을 지었다. 차분한 무채색 의자들을 배치해 전체적으로 우아하며 고급스러운 분위기가 느껴지게 했다.



두 개의 프라이빗 다이닝룸(private dining room) 사이에 위치한 와인 시음 공간(wine tasting room)은 바닥부터 천정까지 이어진 책장들과 백색 페인트로 그려 놓은 수많은 별빛들, 와인을 너무나 사랑한 20세기 초현실주의 화가 살바도르 달리S(alvador Dali)의 와인을 향한 금빛 문구가 벽 한 켠에 새겨져 있다. 또한 첩보 영화에서 종종 등장하는 비밀 문의 요소를 책장 양쪽 부분에 적용해 프라이빗 룸들과 와인 테이스팅 룸을 서로 비밀스럽게 연결하는 요소를 접목시켰다.




큰 룸과 작은 룸으로 구성된 프라이빗 다이닝 룸들의 바닥 카펫 디자인에는 달의 아름다움과 장엄함에 관한 몇 가지 이야기가 담겨 있다. 큰 룸의 바닥 디자인은 쥘 베른의 소설에 등장하는 열기구 이미지와 달의 모양들을 바탕으로 제작됐고, 벽에는 오래돼 낡은 UFO에 관한 신문 기사들과 백과사전에서 오려낸 우주 탐험과 관련된 조각들이 액자에 장식돼  있다.


작은 룸은 중국 송나라 시대의 작가이자 시인인 서동포(Su Shi)의 시 ‘Mid-Autumn Moon’을 수놓았다. 더불어 글을 새겨 놓은 방향을 창가 쪽으로 향하게 만들어 글을 읽으며 자연스럽게 마카오의 풍경, 야경과 달빛을 볼 수 있게 설정했다. 이러한 두 작가의 작품을 통해 같은 하늘 아래에서 바라보는 달이 서양과 동양의 인물들의 다른 시각을 이야기 해보려 했으며 그저 좋은 음식만을 먹는 장소가 아닌, 기억에 남을 공간을 만들기 위해 고민했다.


마지막으로 미스터 토끼 군과 미스 토끼 양이 마스코트로 새겨진 화장실에는 거울 속에서 튀어 나온 듯한 수도꼭지, 엉뚱한 그림들과 벽지, 조명기구들에서 ‘이상한 나라의 앨리스’의 재미난 특성들이 보여 진다.


맛, 분위기 그리고 소통
르 라팡에는 유명 화가 달리의 문구, 서동포의 시, 쥘베른의 소설, 이상한 나라의 앨리스 등 수 많은 이야기 거리가 한 공간 안에 존재한다. 고객들이 서로 이야기 꽃을 피울 수 있는 완벽한 맞춤형 공간으로 디자인됐다. 때론 자신이 영화 속 주인공이 됐다고 착각하고, 시인이 돼 시 한편을 읊조리고, 이제는 현실이 된 달나라 여행을 꿈꾸며, 각박한 삶 속에서 엉뚱한 상상과 여유로움, 감성적 풍요로움을 느끼고자 사람들이 이곳을 다시 찾지 않을까 생각한다. 오늘 지인들을 초대해 달과 토끼 씨들의 비하인드 스토리들을 들려주는 스토리텔러가 되보는 것은 어떨까?

Le Lapin is a quirky French eatery inside I.M. Pei’s Macao Science Center. The Wilson Associates New York design team created a holistic design package for the client that included everything from space planning to menu design.
The idea was to develop a strong brand identity for Carson that would extend beyond the walls of Le Lapin. The graphics team was called in to create original typography for business cards, menus, signage, etc. They were also brought in to present sketches of place settings, dishware and uniforms to ensure Le Lapin’s essence was visually developed across all media.


Design Concept
The entire concept started with the client, Carson, who was born in the year of the rabbit. Carson is a Robouchon-trained chef who wanted to open a modern French restaurant concept in the Macau Science Center, a distinctive conical-shaped building designed by famed architect I.M. Pei.


Influenced by the restaurant’s circular shape, the owner’s Chinese zodiac(rabbit), and Macau’s status as an intersection between East and West, the Wilson Associates team arrived at one prominent design narrative: Jules Verne‘s story of traveling to the moon, and the beloved Chinese fairy tale of the Jade rabbit in the moon.
In Chinese folklore, the rabbit is the companion of the moon goddess. This relationship fueled every element of the design, from the entryway to the private dining rooms and restrooms. Not only would guests leave talking about the savory French cuisine, but they would also leave talking about the venue’s symbolism and playful design narrative.


“Monsieur Rabbit”
Then came Mr. Rabbit or “Monsieur Rabbit,” the protagonist, the mascot and the inspiration for this tale. Mr. Rabbit is a French sophisticate, a wine aficionado, and a bit of a cad. He is a distinct blend of polish and playfulness, an icon based off turn-of-the-century French lithographs. His French ‘je nous se quais’ is found throughout the entire venue, especially in the lux, yet quirky finishes and furnishings. From his constant companion Mademoiselle Rabbit, to his arch nemesis Mr. Fox, Le Lapin is filled with characters and vignettes that allude to the life and times of Monsieur Rabbit, making each guest feel like he/she is a part of the narrative. These characters are referenced throughout the entire space via the door pulls, artwork, bathroom decals, lamps, etc.



Layout
Like the moon, Le Lapin is laid out in a perfect circle. Guests exit the elevator and arrive in a French art gallery setting with a piece of tongue-and-cheek hanging artwork: flying candles! From there, they are greeted by the infamous “wine wall.” This wall is 16 meters high and inventively showcases Carson’s wine collection worth more than $2 million. It is a marvel to behold! It’s three levels of catwalks and various LED/fiber optic starlight elements that play into the lunar design motif like stars in the sky. It is the heart and soul of the entire venue.


Guests walk along the wine wall and into the bar-lounge area, which exudes French sexiness. The tables are tall, the floor is dark marble, while the bar itself is designed to be a floating crescent moon of backlit onyx. The design team decided to house the crystal whiskey bottles in floating mirror boxes behind the bar, so they wouldn’t obstruct the views of the Macau skyline. The main dining parlor, separated by airy gold glo-mesh panels, is an elegant, tailored space with a neutral color palette that seats 50 guests.


The wine tasting room is a double-height space with a floor-to-ceiling collection of books and a mural full of stars, with a giant gold-leafed quote that reads, “Great wine requires a mad man to grow the vine, a wise man to watch over it, lucid poet to make it, and a lover to drink it.” The walls also feature trap doors and “peek-a-boo” windows that look into the private dining rooms, adding a touch of playfulness.



The carpet in both dining rooms is a piece of conversational artwork inspired by poetry. The carpet in the large private dining room is based on Jules Verne’s De la Terre à la Lune (From the Earth to the Moon) and features a collection of custom-designed hot air balloons, while the carpet in the small private dining room features Chinese poet Su Shi’s Mid-Autumn Moon. In fact, the poem is angled in such a way that guides one’s eye out over the Macau skyline, obliging the reader to stop and reminisce. Again, the intent is to create a truly interactive dining experience that leaves the patron with enduring memories, not just a good meal.


The playful restrooms inside Le Lapin possess an Alice in Wonderland eccentricity, which draws the guest deeper into the rabbit’s hole. Monsieur Rabbit and his more reticent counterpart Mademoiselle Rabbit mark the doors to his and hers’ washrooms. Inside, faucets spring from the mirrors, while cheeky artwork, sconces and graphic wallcoverings adorn the walls.


In the end, Le Lapin is representative of the new age of design. It’s time for the designer to think beyond the carpet, beyond the walls, beyond the lighting and develop an identity that holistically envelops the overall project intent, creating touch points for the client and patron for years to come.
